Football Food Friday

Well, now that football is finally here, so is the heat.  The idea of using the stove or oven is not my favorite.  If you are not enjoying the heat either, try this quick recipe for a nice cool salad.  I know, I know, salad isn’t really football food… or is it?  This will go very nicely with that big fat steak you just took off the grill.  Plus the women in your life will love you for making it.  Trust me.  ?

Recipe:  Watermelon Salad

What you need:  1 (5-pound) watermelon,  1 vidalia or other sweet onion,  1/4 cup red wine vinegar, salt and pepper, 1/2 cup extra-virgin olive oil, 2 tablespoons chopped fresh mint,  4 ounces crumbled feta cheese, 6 whole mint sprigs and a half cup of blueberries, strawberries or blackberries.  Whatever goes with your main dish.  Steak = blackberries, fish = strawberries, chicken = whatever.

What you do:  Cut the flesh from the melon and cut into bite size pieces (remove and discard seeds) and set aside. Peel and slice the onion into rings.  In a small bowl, combine the vinegar with the salt and pepper and whisk until salt is dissolved.  Slowly whisk in the olive oil, a few drops at a time. Add in the chopped mint, taste it and add more salt and/or pepper if needed.

In a large bowl, combine the melon, onion, feta and berries if you are adding them. Pour the dressing over the melon mixture and toss gently (by hand) until everything is coated and evenly mixed. Garnish with mint sprigs.  Note:  Kids do not like mint sprigs.
